If you are looking for a healthy snack that gets you through the day or even for a quick breakfast before a workout, energy balls or energy bites are the way to go. You’ll find plenty of recipes online and you can modify any recipe to your liking. I recently posted a recipe for Cashew Nuts Energy Balls. Check it out. Today I experimented with a recipe that’s even easier to make. I know it seems hardly possible! Here come Nutella & Peanut Butter Energy Balls.
Some may argue Nutella isn’t even healthy and you are right, but Nutella makes me happy!
Here is what you’ll need:
- 2 cups of rolled oats
- 1 cup peanut butter (tip: don’t use natural peanut butter)
- 2 tbl sp honey
- 2 tbl sp chia seeds
- 2 tbl sp flax seeds
- 1/4 cup chopped cashew nuts
- 1 tbl sp Nutella
How to prepare:
To make it easier to mix everything, I heated the peanut butter and honey in the microwave for about 30 seconds. Without the peanut butter and honey mix to cool down, I added chia seeds, flax seeds, Nutella and half of the rolled oats and mixed it all up. I then added the chopped cashew nuts and the remaining rolled oats and mixed everything up again.
You may ask why I didn’t mix it all together from the start. This way I was able to determine how many rolled oats and cashews I needed. It’s easy at this point to either add more or use less depending on the density of the mix (and personal preference).
The last step is straight forward: form bite-size balls and stick the Nutella & Peanut Butter Energy Balls in the freezer. I recommend to always keep them in the freezer.
