Healthy Snacks: Non-Bake Brownie Bites

I have been playing around trying to find a healthier substitute for brownies. So for my first attempt I didn’t want to stray too far from my base recipe, the Cashew Nuts Energy Balls.

For this first batch of  brownie bites, i decided to substitute part of the rolled oats with a mix of chopped and finely ground walnuts. If I still like the brownies tomorrow, I’ll fully substitute rolled oats with ground walnuts next time. I also kept the peanut butter as part of this recipe, but that was purely because I ran out of dates. My next recipe will play around with more substitutions.

Anyhow, let me present the Non-Bake Brownie Bites!

Here is what you”ll need:

  • 1/3 cups dates
  • 1/2 cup finely ground walnuts
  • 1/2 cup chopped walnuts
  • 1 cup rolled oats
  • 1 cup peanut butter
  • 2 tbl sp cocoa powder
  • 1 tbl sp flax seed
  • 1 tbl sp chia seed

How to prepare:

Grind and chop the walnuts using a food blender for example. Chop the dates. Mix everything in a large bowl. Then form into bite size balls or distribute evenly in a pan. Then put into your freezer. Give them about 4 hours, then enjoy!
